3 cups seedless watermelon, cut into 1/2 inch cubes
1-1/2 cups seedless cucumber, cut into half inch cubes
2 tbsp thinly sliced fresh mint leaves
Zest of two limes
½ of a red onion, sliced very thin.
¼ cup fresh lime juice (about 2 limes)
1 tbsp olive oil
Pinch of sea salt
Pinch of black pepper
Place thinly sliced red onions into a bowl of cold water and let soak for 10 minutes.
Drain the red onions.
Combine watermelon, cucumber, drained onions, mint and lime zest in a large bowl.
Combine the lime juice, lime zest, olive oil, salt and pepper into a small bowl.
Stir (or shake) well to combine. Pour over the watermelon and cucumber and stir well.
